- In a medium bowl, combine 2 cups of plain Greek yogurt, 1 cup of creamy peanut butter, 1/4 cup of maple syrup (or honey), and 1 teaspoon of vanilla extract. Stir until smooth.
- Line a 9x9-inch baking pan with parchment paper. Dollop half of the yogurt mixture into the pan, forming mounds and inserting popsicle sticks.
- Spread the remaining yogurt mixture evenly over the mounds, ensuring all are covered.
- Place the pan in the freezer for approximately 2 hours, until completely solid.
