Method
 

Preparation Steps
  1. Wash the Persian cucumbers under cold water and dice them into bite-sized pieces. Set aside in a large mixing bowl.
  2. Wash the peaches, cut them in half, remove the pits, and slice into small chunks.
  3. Wash and chop the red bell pepper into similarly sized pieces as the cucumber and peach.
  4. In the large mixing bowl, combine the diced cucumber, peaches, and bell pepper, gently stirring with a spatula.
  5. Finely chop cilantro or parsley and sprinkle over the salad mixture, tossing gently to combine.
  6. Chill the salad in the refrigerator for about 10 minutes before serving.
