- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a medium bowl, combine chopped fresh spinach, finely grated Parmesan cheese, salt, pepper, and any optional spices you'd like to include. Mix thoroughly.
- On a lightly floured surface, roll out the thawed puff pastry sheets until they're about 1/8 inch thick.
- Using a sharp knife or pizza cutter, cut the rolled pastry into 1-inch-wide strips.
- Take one strip of pastry and place a spoonful of the spinach filling at one end. Fold the pastry over the filling and twist it tightly.
- In a small bowl, beat an egg and use a pastry brush to lightly coat each twist with the egg wash.
- Arrange the filled pastries on the prepared baking sheet and bake for about 15 to 20 minutes until golden brown.
