  1. Prep Ingredients: Dice the chicken, chop the bell peppers and onion, and mince the garlic. Measure out the rice, corn, and spices.
  2. Sauté Aromatics: Heat 2 tablespoons of oil in a large pot over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 3–4 minutes.
  3. Brown the Chicken: Add diced chicken and season with salt and pepper. Cook for 5–6 minutes until lightly golden.
