Step-by-Step Instructions
  1. Heat a large skillet over medium heat for about 2 minutes. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for 5 minutes on each side until golden brown.
  2. Mix BBQ sauce and honey in a bowl. Pour over the seared chicken and let it soak for a minute.
  3. Add rice and chicken broth to the skillet, stirring gently. Bring to a gentle simmer, ensuring rice is coated in sauce.
  4. Cover the skillet, reduce heat to low, and cook undisturbed for about 20 minutes.
  5. In the last 5 minutes, place mixed vegetables on top of chicken and rice, cover, and steam until heated through.
  6. Remove from heat, let sit covered for 5 minutes. Fluff rice with a fork before serving, garnishing with chopped green onions or parsley if desired.
