- Preheat the oven to 350°F (175°C) and prepare an 8x8 inch baking pan by greasing it or lining it with parchment paper.
- Melt 1 cup of unsalted butter in a medium saucepan over low heat. Stir occasionally, then remove from heat and stir in light brown sugar and granulated sugar until smooth.
- Allow the mixture to cool, then whisk in 2 large eggs one at a time and add 1 teaspoon of vanilla extract until smooth.
- Sift together 1 cup of flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt in a separate bowl. Fold the dry ingredients into the wet ingredients until just combined.
- Fold in 1 cup of chopped Mini Cadbury Eggs evenly throughout the batter.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow the blondies to cool in the pan for at least 15 minutes before cutting into squares.
