Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the chicken thighs with olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and oregano. Mix thoroughly and let it marinate for at least 1 hour, preferably overnight.
  3. After marinating, thread the chicken thighs onto a Vertical Gyro Spit Plate, alternating the direction of each piece.
  4. If you don't have a Vertical Gyro Oven Plate, create a makeshift spit using a large onion and wooden skewers.
  5. Place the gyro plate or makeshift spit in the oven, adding 1 cup of water or stock to the base to keep the chicken moist.
  6. Cover the top chicken thighs with aluminum foil to prevent burning and bake for 75-90 minutes, until fully cooked at an internal temperature of 165°F (75°C).
  7. Once cooked, let the chicken rest for about 10 minutes before slicing.
  8. Slice the chicken into thin strips and serve on warm pita with tzatziki, fresh veggies, or Greek salad.
