Step-by-Step Instructions
  1. Start by toasting the dulse in a dry skillet over medium heat for about 2-3 minutes until fragrant. Let it cool. Toast the nori sheets until lightly crisp, then crumble.
  2. In a bowl, combine the toasted dulse, crumbled nori, softened butter, lemon zest, and sea salt. Blend until smooth and refrigerate to firm up.
  3. Preheat your oven to 425°F (220°C) and prepare your baking vessel with non-stick spray to prevent sticking.
  4. Rinse and pat dry the scallops. Remove any tough edges and arrange in the prepared dish.
  5. Spoon a tablespoon of seaweed butter onto each scallop, then bake for 5-7 minutes until the butter is bubbling. Basque halfway through and bake again for another 5-7 minutes.
  6. Remove from oven, transfer to a serving platter, and serve immediately to enjoy the seafood flavors.
