Method
 

Step-by-Step Instructions
  1. Preheat a large non-stick skillet over medium heat for about 5 minutes.
  2. Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.
  3. Place one slice of sourdough, butter-side down, on the hot skillet, spread mustard if desired, then layer with roast beef and cheddar.
  4. Top with another slice of sourdough, butter-side up, to create an enclosure for the fillings.
  5. Grill for 3-5 minutes until the bottom is golden brown and the cheese begins to melt.
  6. Flip the sandwich and cook the other side for another 3-5 minutes.
  7. Check for doneness; both sides should be golden and cheese should be gooey.
  8. Remove from skillet, let cool slightly, then slice and serve.
