  1. In a large skillet, pour enough vegetable oil to cover the bottom about an inch deep and heat it to 360°F using a candy thermometer.
  2. While the oil is heating, whisk together 1/2 cup of granulated sugar and 1–2 teaspoons of ground cinnamon in a shallow bowl. Set aside.
  3. In a saucepan, combine 1/2 cup unsalted butter, 1 cup of water, 1 tablespoon of sugar, and a pinch of salt. Bring to a boil.
  4. Remove from heat and quickly stir in 1 cup of all-purpose flour until a dough forms. Allow it to cool slightly for about 5 minutes.
