Ingredients
  

For the Salad
  • 8 oz short pasta e.g., rotini or farfalle
  • 1 cup grape tomatoes or cherry tomatoes
  • 1 cup cucumbers English or Persian preferred
  • 0.5 medium red onion sliced
  • 2 cups baby spinach or arugula
  • 0.5 cup green olives Kalamata olives can be used
  • 0.25 cup black olives optional
  • 1 cup feta cheese crumbled
For the Dressing
  • 0.5 cup homemade Greek Salad Dressing adjust olive oil and vinegar to taste

Method
 

Steps
  1. Cook the pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine grape tomatoes, cucumbers, red onion, and baby spinach. Add green and black olives and mix.
  3. Drizzle dressing over the ingredients in the bowl and toss gently until everything is well coated.
  4. Fold in crumbled feta cheese and season with salt and pepper according to taste.
  5. Serve immediately or chill in the refrigerator for about 30 minutes before serving.
