For the Cheese Topping
  • 1 cup Shredded mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
For Garnish
  • 1/4 cup Fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  2. In a large bowl, combine the chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, and pepper. Toss to coat.
  3. Transfer the mixture to the greased baking dish and top with mozzarella and Parmesan cheese.
  4. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake uncovered for 10-15 minutes, until cheese is golden and chicken is cooked through.
  5. Remove from oven, let sit for 5 minutes, and garnish with parsley before serving.
