Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine chicken, zucchini, tomatoes, onion, and garlic. Drizzle with olive oil and seasonings, then mix well.
  3. Spread the mixture evenly in the baking dish and top with mozzarella and Parmesan cheese.
  4. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes until chicken is cooked to 165°F (75°C).
