For the Flavoring
  • ¼ cup Sun-dried tomatoes Introduces concentrated flavor.
  • 2 tsp Dried oregano Key herb for Mediterranean flavor.
  • 1 tsp Dried basil Complements other herbs.
  • ½ tsp Dried thyme Adds an earthy note.
  • 1 Lemon juice From 1 lemon.
  • ½ cup Feta cheese Creamy topping.
  • 2 tbsp Fresh parsley Optional garnish.

Method
 

Step-by-Step Instructions
  1. Prepare ingredients by washing and chopping all the vegetables and cutting the chicken into small pieces.
  2. Heat olive oil in a skillet over medium-high heat, then add seasoned chicken and sear for 6-7 minutes.
  3. Reduce heat and sauté onion and garlic for 2 minutes, then add bell peppers and zucchini for another 3-4 minutes.
  4. Return the chicken to the skillet, mix with vegetables and add the sun-dried tomatoes, cherry tomatoes, olives, and herbs.
  5. Remove from heat, add lemon juice, sprinkle feta and parsley, then serve.
