- Prepare ingredients by washing and chopping all the vegetables and cutting the chicken into small pieces.
- Heat olive oil in a skillet over medium-high heat, then add seasoned chicken and sear for 6-7 minutes.
- Reduce heat and sauté onion and garlic for 2 minutes, then add bell peppers and zucchini for another 3-4 minutes.
- Return the chicken to the skillet, mix with vegetables and add the sun-dried tomatoes, cherry tomatoes, olives, and herbs.
- Remove from heat, add lemon juice, sprinkle feta and parsley, then serve.
