For the Vegetables
  • 1 medium zucchini substitute with seasonal vegetables like asparagus
  • 2 medium red bell peppers other bell peppers can be used as well
  • 1 medium red onion can be replaced with yellow onion
  • 1 cup cherry tomatoes diced regular tomatoes can be used if needed
  • 2 cloves garlic garlic powder can be used if fresh isn't available
  • 1/2 cup Kalamata olives swap with other olives if desired
For the Flavor
  • 2 tablespoons extra virgin olive oil can substitute with canola oil for a different taste
  • 1 teaspoon dried oregano Italian seasoning can be a convenient alternative
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 cup sun-dried tomatoes use more fresh tomatoes if necessary
  • 1 teaspoon salt adjust to your liking
  • 1/2 teaspoon black pepper adjust to your liking
For the Finishing Touches
  • 1 medium lemon crucial for brightening the dish’s flavors
  • 1/2 cup feta cheese omit for a dairy-free version or use a vegan cheese
  • 1/4 cup fresh parsley optional garnish

Step-by-Step Instructions
  1. Prep Ingredients: Start by washing and chopping all your vegetables and chicken into similarly sized pieces, ensuring even cooking.
  2. Cook Chicken: In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Season the chicken pieces with salt and black pepper, then add them to the skillet. Sear the chicken for about 6-8 minutes, or until golden brown and fully cooked, stirring occasionally.
  3. Sauté Vegetables: In the same skillet, drizzle in the remaining olive oil and add the diced red onion and minced garlic. Sauté for around 2 minutes until fragrant, then toss in the zucchini, red bell peppers, and cherry tomatoes. Cook for 4-5 minutes.
  4. Combine: Return the seared chicken to the skillet. Add in the sun-dried tomatoes, dried oregano, basil, and thyme, mixing well to incorporate all the flavors.
  5. Finish: Squeeze the juice of one fresh lemon over the stir fry. Fold in the Kalamata olives and crumbled feta cheese. Cook together for another 2 minutes.
  6. Serve and Garnish: Serve immediately, garnished with fresh parsley for a pop of color and flavor.
