  • 1/2 cup Kalamata olives or your favorite olives
  • 1/2 cup feta cheese omit for dairy-free
  • 1/2 cup hummus or tzatziki or avocado
  • 1/4 cup fresh parsley or cilantro
  • 2 lemon wedges for serving

Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, or set your oven to 375°F (190°C). In a large mixing bowl, whisk together olive oil, fresh lemon juice, dried oregano, ground paprika, garlic powder, salt, and black pepper to create a marinade.
  2. Place the chicken breasts in the marinade, ensuring they are well-coated. Let them sit for at least 15 minutes.
  3. In a medium saucepan, bring 2 cups of broth to a boil. Add 1 cup of rinsed quinoa and reduce heat to low. Cover and cook for 15-20 minutes.
  4. Grill the marinated chicken for 6-7 minutes per side until the internal temperature reaches 165°F (74°C). Alternatively, bake in the oven for 25-30 minutes.
  5. Assemble the bowls by adding a base of quinoa, topped with sliced grilled chicken, cherry tomatoes, diced cucumber, red onion, olives, and crumbled feta cheese.
  6. Top with hummus and sprinkle with parsley. Serve with lemon wedges.
