  • 1 teaspoon Vanilla Extract optional
  • 1 cup Mashed Overripe Bananas darkly specked for best flavor
  • 1 cup Chopped Toffee or chocolate chips

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your baking pans by greasing them lightly.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine the white sugar and dark brown sugar until there are no lumps.
  4. Add the eggs, vegetable oil, whole milk, bourbon, maple extract, and vanilla to the sugar mixture.
  5. Fold in the mashed overripe bananas into the wet mixture.
  6. Gradually add the dry ingredients to the wet banana mixture, stirring gently until just incorporated.
  7. Fold in the chopped toffee until evenly distributed throughout the batter.
  8. Evenly distribute the batter between the greased loaf pans, filling them no more than three-quarters full.
  9. Bake for standard loaves for 55-60 minutes or mini loaves for 40-45 minutes until a toothpick comes out clean.
  10. Allow the bread to cool for about 10 minutes before transferring to a wire rack.
