Step-by-Step Instructions for Baked Elote Dip
  1. Preheat your oven to 350°F (175°C) and gather your ingredients and skillet for sautéing.
  2. In a skillet, heat the olive oil over medium and sauté the white and light-green parts of the scallions for 2-3 minutes until fragrant.
  3. Add corn and Tajin to the skillet and cook for an additional 3-5 minutes until the corn softens.
  4. Reduce the heat and stir in the cream cheese until incorporated, then fold in sour cream and Cotija cheese.
  5. Transfer to the oven and bake for 10-12 minutes until bubbling and lightly browned.
  6. Broil for an additional 2-3 minutes, watching closely until the cheese is golden.
  7. Garnish with dark green scallion tops and cilantro, and serve immediately with tortilla chips or veggies.
