Step‑by‑Step Instructions for Lemon Meringue Pie Bites
  1. Preheat your oven to 350°F (175°C). Combine crushed graham crackers, granulated sugar, and melted butter in a mixing bowl. Press firmly into mini muffin tins and bake for about 10 minutes until golden brown. Remove and set aside to cool.
  2. In a separate bowl, whisk together lemon juice, lemon zest, sweetened condensed milk, egg yolks, and vanilla extract until smooth. Pour into the crusts, filling them three-quarters full. Bake for another 10 minutes until set.
  3. For the meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar until stiff peaks form. This will take about 5 minutes.
  4. Add meringue onto filled bites, sealing the edges. Broil for 1-2 minutes until golden brown; watch closely.
  5. Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving.
