  • 12 pieces jumbo pasta shells or manicotti as a substitute
For the Filling
  • 2 cups leftover turkey chopped
  • 1 cup mashed potatoes or sweet potatoes as an alternative
  • 1 tablespoon celery diced, or bell pepper as a substitute
  • 2 tablespoons yellow onion diced, or shallots for a milder taste
  • 1 clove garlic minced, or garlic powder as a substitute
  • 3 ounces cheddar cheese shredded, or mozzarella as an alternative
  • 1 cup bread stuffing leftover or omit for a lighter version
For Assembly
  • 1.25 cups gravy homemade or store-bought
  • to taste salt
  • to taste pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 1½ quart baking dish.
  2. Cook the pasta in a large pot of salted boiling water for 8-9 minutes until al dente. Drain and set aside.
  3. Chop the turkey into small pieces and warm the mashed potatoes in the microwave.
  4. In a mixing bowl, combine turkey, mashed potatoes, onion, celery, garlic, and half of the cheddar cheese. Season with salt and pepper.
  5. Spread 3/4 cup of gravy across the bottom of the baking dish.
  6. Stuff each pasta shell with the turkey and potato mixture and place them in the dish open-side up.
  7. Sprinkle bread stuffing on top and drizzle with remaining gravy. Finish with the rest of the cheese.
  8. Bake for 25-30 minutes until cheese is bubbly and golden brown. Let cool slightly before serving.
