Step-by-Step Instructions
  1. Begin by cutting your chicken thighs into bite-sized pieces. Marinate with soy sauce, oyster sauce, black pepper, and cornstarch for 10 minutes.
  2. Whisk together soy sauce, black vinegar, dark soy sauce, sugar, water, and cornstarch in a bowl until fully dissolved.
  3. Bring a large pot of water to boil and cook hand-cut noodles for 4-5 minutes. Drain and toss with a little oil.
  4. Heat oil in a frying pan, add marinated chicken, and sauté for 8-9 minutes until browned.
  5. Add ginger, Sichuan peppercorns, dry red chili, and white parts of the green onion to the pan, cooking for 2-3 minutes.
  6. Add cooked noodles and prepared sauce to the pan, tossing together for 2-3 minutes until evenly coated.
  7. Serve hot, garnished with crushed roasted peanuts and green onion greens.
