- In a mixing bowl, combine 1 cup of almond flour, 2 tablespoons of psyllium husk, 1 cup of shredded mozzarella, and 1 teaspoon of salt. Mix well until evenly distributed.
- Gradually pour in ½ cup of warm water while mixing the dough with your hands or a spoon. Allow the dough to rest for about 5 minutes.
- Divide the dough into four equal portions, roll into balls, and flatten into thick discs.
- Add a tablespoon of butter or oil to a preheated skillet and place each arepa into the skillet, cooking for 4–5 minutes on one side.
- Flip and fry for an additional 4–5 minutes until golden and crispy. Transfer to a plate lined with paper towels.
- Let the arepas rest for a few minutes before slicing open and filling with your favorite fillings.
