Method
 

Preparation
  1. Cut the day-old English muffins into bite-sized pieces and preheat the oven to 350°F. Grease a 9x13-inch baking dish.
  2. Layer the muffin pieces evenly in the baking dish.
  3. Distribute the Canadian bacon over the muffin layers and press down gently.
  4. Whisk together eggs, milk, salt, and pepper in a large bowl until combined. Pour the custard mixture over muffin and bacon layers.
  5. Cover the dish with plastic wrap and chill in the refrigerator for at least 2 hours, or ideally overnight.
  6. Remove from the refrigerator and let sit for 15 minutes. Bake for 45 minutes until golden and a toothpick comes out clean.
  7. Let the casserole cool for about 10 minutes and prepare the hollandaise sauce.
  8. Slice the casserole and serve topped with hollandaise sauce and fresh herbs.
