Preparation
- Cut the day-old English muffins into bite-sized pieces and preheat the oven to 350°F. Grease a 9x13-inch baking dish.
- Layer the muffin pieces evenly in the baking dish.
- Distribute the Canadian bacon over the muffin layers and press down gently.
- Whisk together eggs, milk, salt, and pepper in a large bowl until combined. Pour the custard mixture over muffin and bacon layers.
- Cover the dish with plastic wrap and chill in the refrigerator for at least 2 hours, or ideally overnight.
- Remove from the refrigerator and let sit for 15 minutes. Bake for 45 minutes until golden and a toothpick comes out clean.
- Let the casserole cool for about 10 minutes and prepare the hollandaise sauce.
- Slice the casserole and serve topped with hollandaise sauce and fresh herbs.
