Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare two large baking sheets lined with parchment paper.
  2. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  3. In a large bowl, cream together ½ cup of unsalted butter and 1 cup of granulated sugar until light and fluffy.
  4. Add 1 large egg and 1 teaspoon of vanilla extract, mixing until combined.
  5. Gradually add the dry ingredient mixture to the butter mixture, stirring until just combined.
  6. Gently fold in 1 cup of diced fresh peaches, being careful not to crush them.
  7. Scoop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 18-20 minutes until edges are lightly golden and centers are soft.
  9. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
