- Preheat your oven to 375°F (190°C) and prepare your baking dish.
- Drain the sliced peaches and combine them with 1/4 cup of brown sugar and 1/4 teaspoon of cinnamon in the baking dish.
- Dice half of the butter and sprinkle it over the peach mixture, then drizzle with vanilla extract.
- In a separate bowl, mix old-fashioned oats, remaining brown sugar, 1/4 teaspoon cinnamon, and a pinch of salt together.
- Whisk together reserved peach juice, heavy cream, remaining vanilla extract, and large eggs until combined.
- Pour the wet ingredients over the oat mixture and stir just until moistened, then spread over the peach layer.
- Dot the top with remaining butter and garnish with reserved peach slices.
- Bake in the preheated oven for 45 minutes or until golden brown and bubbly.
- Allow to cool for 15 minutes before serving warm.
