  • 1/4 teaspoon Salt Ensure a pinch is included in the oat mixture
For the Oat Mixture
  • 2 cups Old-Fashioned or Rolled Oats Quick oats can be used but will alter texture
  • 1 cup Heavy Cream Can swap with half-and-half or whole milk
  • 2 Large Eggs Can use aquafaba or flax eggs for a vegan option

Method
 

  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. Drain the sliced peaches and combine them with 1/4 cup of brown sugar and 1/4 teaspoon of cinnamon in the baking dish.
  3. Dice half of the butter and sprinkle it over the peach mixture, then drizzle with vanilla extract.
  4. In a separate bowl, mix old-fashioned oats, remaining brown sugar, 1/4 teaspoon cinnamon, and a pinch of salt together.
  5. Whisk together reserved peach juice, heavy cream, remaining vanilla extract, and large eggs until combined.
  6. Pour the wet ingredients over the oat mixture and stir just until moistened, then spread over the peach layer.
  7. Dot the top with remaining butter and garnish with reserved peach slices.
  8. Bake in the preheated oven for 45 minutes or until golden brown and bubbly.
  9. Allow to cool for 15 minutes before serving warm.
