  • 2 cups All-Purpose Flour or cake flour for lighter texture
  • 1 cup Granulated Sugar can be reduced for less sweetness
  • 1/2 cup Dark Brown Sugar or light brown sugar as substitute
  • 1 teaspoon Cinnamon omit for pure blueberry taste
  • 1/2 cup Butter (Room Temperature) unsalted recommended
  • 2 teaspoons Baking Powder ensure freshness
  • 1/2 teaspoon Salt balances flavors
  • 3 large Eggs (Room Temperature) or flax eggs for vegan option
  • 1 tablespoon Lemon Zest fresh preferred
  • 1 cup Sour Cream (Room Temperature) Greek yogurt as substitute
  • 1/4 cup Vegetable Oil (Room Temperature) or melted coconut oil
  • 1 teaspoon Vanilla Extract pure is best
  • 2 cups Blueberries fresh or substitute with raspberries or blackberries
  • 2 tablespoons Cornstarch optional to prevent sinking blueberries
For the Lemon Glaze
  • 1 cup Powdered Sugar can use sugar alternative
  • 2 tablespoons Lemon Juice fresh recommended

Method
 

Preparation Steps
  1. Preheat your oven to 175ºC (350ºF) and prepare a 9-inch springform pan with parchment paper and greased sides.
  2. In a bowl, mix all-purpose flour, granulated sugar, dark brown sugar, cinnamon, and cold butter until crumbly.
  3. In a large bowl, cream the room-temperature butter, granulated and brown sugars until light and fluffy, about 3-4 minutes. Add eggs one at a time.
  4. Gradually mix in half of the sifted all-purpose flour with baking powder and salt, then add the rest along with lemon zest, sour cream, vegetable oil, and vanilla.
  5. Toss blueberries with cornstarch, then fold half into the batter and pour into the prepared pan, topping with the remaining blueberries and crumble.
  6. Bake for 45-50 minutes, checking doneness with a toothpick at 45 minutes. Let cool in the pan for 10 minutes before transferring to a wire rack.
  7. For the lemon glaze, whisk together powdered sugar, lemon juice, vanilla extract, and sour cream until smooth, then drizzle over the cooled cake.
