  • 1 pkg Pink Lemonade Drink Mix or lemon powder and red food coloring as substitute

  • 1 cup Powdered Sugar for dusting

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare the baking sheets lined with parchment paper.
  2. Cream together the softened unsalted butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the large egg, fresh lemon juice, and lemon zest; mix until well combined.
  4. Whisk together all-purpose flour, baking powder, baking soda, salt, and pink lemonade drink mix in a separate bowl.
  5. Gradually add dry ingredients to wet ingredients, mixing gently until incorporated.
  6. Drop rounded mounds of dough onto prepared sheets, flattening them slightly.
  7. Bake for 10-12 minutes, until edges are lightly golden but centers are soft.
  8. Cool on sheets for 5 minutes, then dust with powdered sugar before transferring to wire rack.
