  1. Preheat your oven to 180°C (350°F) and brush a 26cm (11.5") skillet with olive oil.
  2. Slice the sweet potatoes into 3-4mm thick rounds using a mandoline.
  3. Melt the butter and mix with olive oil, minced garlic, rosemary, salt, and pepper. Coat the sweet potato slices.
  4. Arrange the coated sweet potato slices in the skillet in overlapping circles.
  5. Cover the skillet with foil and bake for 30 minutes.
  6. Remove the foil, increase the temperature to 220°C (430°F), brush with olive oil, and bake uncovered for an additional 20 minutes.
  7. Garnish with additional rosemary and sea salt before serving.
