  • 2 cups diced ripe pears peeled
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons spicy mustard or hot sauce for extra heat
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1/4 teaspoon black pepper freshly cracked
  • 1 tablespoon honey or maple syrup for a twist
  • 1/2 teaspoon salt to taste
Pastry
  • 1 sheet puff pastry dough thawed
  • 1 large egg for wash
Garnish
  • 2 tablespoons fresh parsley or chives chopped, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully peel each ripe pear and dice them into small, even pieces.
  3. In a mixing bowl, combine the diced pears, shredded cheddar cheese, spicy mustard, cayenne pepper, black pepper, honey, and salt. Stir until evenly mixed.
  4. On a lightly floured surface, roll out the puff pastry dough to about ¼-inch thickness and cut into squares.
  5. Spoon a generous amount of the filling into the center of each pastry square.
  6. Fold the corners of the pastry over the filling to form a triangle and crimp the edges to seal.
  7. Whisk the egg and brush it lightly over the tops of each sealed triangle.
  8. Bake in the preheated oven for 15-20 minutes until golden brown.
  9. Let them cool for a few minutes on a wire rack before serving.
  10. Garnish with freshly chopped parsley or chives, if desired.
