Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Carefully peel each ripe pear and dice them into small, even pieces.
- In a mixing bowl, combine the diced pears, shredded cheddar cheese, spicy mustard, cayenne pepper, black pepper, honey, and salt. Stir until evenly mixed.
- On a lightly floured surface, roll out the puff pastry dough to about ¼-inch thickness and cut into squares.
- Spoon a generous amount of the filling into the center of each pastry square.
- Fold the corners of the pastry over the filling to form a triangle and crimp the edges to seal.
- Whisk the egg and brush it lightly over the tops of each sealed triangle.
- Bake in the preheated oven for 15-20 minutes until golden brown.
- Let them cool for a few minutes on a wire rack before serving.
- Garnish with freshly chopped parsley or chives, if desired.
