- Melt butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice in a skillet, stirring continuously until thickened.
- Remove from heat and mix in graham cracker crumbs and white chocolate chips. Optionally add orange food coloring.
- Transfer the mixture to a greased baking sheet, cover, and refrigerate for at least 2 hours or overnight.
- Scoop out portions and shape into balls, around 1 inch in diameter.
- Roll truffles in granulated sugar and top with chocolate chips.
- Serve immediately or store in an airtight container in the refrigerator.
