- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together 1 ¾ cups of all-purpose flour, ¾ cup of unsweetened cocoa powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- In a large mixing bowl, cream together ½ cup of softened unsalted butter, ½ cup of granulated sugar, and ½ cup of light brown sugar until light and fluffy.
- Add 1 large egg and 1 teaspoon of vanilla extract, mixing until fully combined.
- Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
- Gently fold in 1 cup of semi-sweet chocolate chips using a spatula.
- Add in 1 cup of mini marshmallows and optional marshmallow fluff, carefully folding them into the dough.
- Drop heaping amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 8-10 minutes.
- Allow cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
