Kofta Preparation
- Soak the wooden skewers in water for at least 30 minutes.
 - In a large mixing bowl, combine the ground lamb, cooked quinoa or bulgur, ground cumin, salt, and ras el hanout.
 - Grate the onion directly into this mixture and mix gently.
 - Divide the mixture into eight equal portions and mold around skewers.
 - Preheat the grill and brush grates with oil. Grill kofta skewers for 6-8 minutes, turning halfway.
 - While grilling, prepare the yogurt-tahini sauce by mixing tahini, garlic, and a pinch of salt. Add yogurt, lemon juice, and parsley.
 - Once grilled, remove kofta from skewers and serve with the sauce.
