Ingredients
  

For the Kofta
  • 1 pound Ground Lamb or ground turkey for leaner option
  • 1 cup Cooked Quinoa or Bulgur use bulgur for traditional or quinoa for gluten-free
  • 2 teaspoons Ground Cumin
  • 1 teaspoon Kosher Salt or Sea Salt
  • 1 tablespoon Ras El Hanout or mix cumin, coriander, and cinnamon
  • 1/2 teaspoon Red Pepper Flakes optional
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1/4 cup Chopped Flat-Leaf Parsley
  • 1/4 cup Chopped Fresh Mint
  • 1 medium Onion grated
For the Yogurt-Tahini Sauce
  • 1/2 cup Tahini or blended sunflower seeds for nut-free
  • 2 cloves Garlic minced
  • 1 cup Plain Yogurt
  • 2 tablespoons Freshly Squeezed Lemon Juice
  • 2 tablespoons Chopped Flat-Leaf Parsley for sauce
  • 1/4 teaspoon Cayenne Pepper or Hot Red Pepper Powder adjust to taste

Method
 

Kofta Preparation
  1. Soak the wooden skewers in water for at least 30 minutes.
  2. In a large mixing bowl, combine the ground lamb, cooked quinoa or bulgur, ground cumin, salt, and ras el hanout.
  3. Grate the onion directly into this mixture and mix gently.
  4. Divide the mixture into eight equal portions and mold around skewers.
  5. Preheat the grill and brush grates with oil. Grill kofta skewers for 6-8 minutes, turning halfway.
  6. While grilling, prepare the yogurt-tahini sauce by mixing tahini, garlic, and a pinch of salt. Add yogurt, lemon juice, and parsley.
  7. Once grilled, remove kofta from skewers and serve with the sauce.
