  • 3 tablespoons Unsalted Butter
  • 3 tablespoons All-Purpose Flour
  • 1 cup Milk (whole recommended) plant-based milk can be used for dairy-free
  • 1 teaspoon Mustard Powder optional
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Nutmeg optional
For the Coating
  • 2 large Eggs
  • 1 cup Breadcrumbs (preferably panko)
For Frying
  • 2 inches Vegetable Oil for frying

Method
 

Step‑by‑Step Instructions
  1. Finely chop the cooked Halal chicken or turkey ham and grate cheese. Set aside.
  2. In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour, cooking for 2-3 minutes until smooth and light golden.
  3. Gradually whisk in the whole milk, cooking for 4-5 minutes until thickened.
  4. Remove from heat and stir in salt, pepper, and optional mustard powder or nutmeg. Adjust seasoning as desired.
  5. Incorporate the chopped ham and grated cheese into the mixture, then chill in the refrigerator for 15 minutes.
  6. Roll cooled filling into balls or oval shapes roughly 1-2 inches in size.
  7. Prepare a dredging station with flour, beaten eggs, and breadcrumbs. Coat each croquette in flour, dip in egg, then roll in breadcrumbs.
  8. Heat vegetable oil in a large frying pan to 350°F (175°C).
  9. Fry croquettes in batches for 3-4 minutes per side until golden brown.
  10. Transfer to a plate lined with paper towels to drain before serving.
