Preparation Steps
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 egg, 2 tablespoons of sugar, and a pinch of salt. Mix until the dough comes together, then knead on a floured surface for about 5–7 minutes until smooth and elastic.
- Wrap the dough in plastic wrap and let it rest for 15 minutes at room temperature.
- Flour your work surface and roll out the rested dough until it's about 1/8-inch thick. Cut the dough into circles or rectangles.
- Heat oil in a deep pan or fryer to 350°F (175°C) for frying. Fry the pastry shapes for about 2–3 minutes per side until golden brown.
- In a medium bowl, mix 1 cup of ricotta cheese, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth. Chill for about 15 minutes if desired.
- Once the pastry shells have cooled completely, fill a piping bag with the ricotta mixture and pipe into the shells.
- Garnish with mini chocolate chips or chopped pistachios.
- Serve immediately to enjoy their crispy texture and creamy filling.
