Ingredients
  

For the Crust
  • 2 cups Vanilla Wafer Crumbs Graham cracker crumbs can be substituted.
  • 1/4 cup Sugar Reduce for less sweetness.
  • 1/2 cup Salted Butter Use unsalted butter if preferred.
For the Cheesecake Filling
  • 16 oz Cream Cheese Bring to room temperature.
  • 1/4 cup All-Purpose Flour Gluten-free flour can be used.
  • 1 pkg Instant Banana Cream Pudding Mix Vanilla pudding mix can substitute.
  • 1 cup Sour Cream Greek yogurt is a lighter alternative.
  • 3 Eggs Room temperature is best for mixing.
  • 1 tbsp Vanilla Extract
  • 2 medium Mashed Ripe Bananas Use ripe for optimum sweetness.
For the Topping
  • 1 cup Heavy Whipping Cream Dairy-free version can be used.
  • 1/4 cup Powdered Sugar
  • 2 medium Fresh Bananas Add just before serving.
  • 1 cup Whole Vanilla Wafers

Method
 

Preparing the Cheesecake
  1. Preheat oven to 325°F (163°C) and prepare a springform pan with parchment paper and grease the sides.
  2. In a mixing bowl, mix vanilla wafer crumbs, sugar, and melted butter; press into the pan. Bake for 8-10 minutes until golden, then cool.
  3. Lower oven to 300°F (148°C). In a large bowl, beat cream cheese, sugar, flour, and pudding mix until smooth.
  4. Add sour cream, then eggs one at a time. Fold in bananas and vanilla extract until just combined.
  5. Pour the filling into cool crust and bake in a water bath for 90-105 minutes or till edges are set.
  6. Cool in the oven for 30 minutes, then at room temperature for 30 minutes before chilling in the fridge for at least 6 hours.
Serving the Cheesecake
  1. Whip heavy cream with powdered sugar until stiff peaks form.
  2. Unmold cheesecake, top with banana slices, whipped cream, and garnish with whole wafers. Serve and enjoy!
