Preparing the Cheesecake
- Preheat oven to 325°F (163°C) and prepare a springform pan with parchment paper and grease the sides.
- In a mixing bowl, mix vanilla wafer crumbs, sugar, and melted butter; press into the pan. Bake for 8-10 minutes until golden, then cool.
- Lower oven to 300°F (148°C). In a large bowl, beat cream cheese, sugar, flour, and pudding mix until smooth.
- Add sour cream, then eggs one at a time. Fold in bananas and vanilla extract until just combined.
- Pour the filling into cool crust and bake in a water bath for 90-105 minutes or till edges are set.
- Cool in the oven for 30 minutes, then at room temperature for 30 minutes before chilling in the fridge for at least 6 hours.
Serving the Cheesecake
- Whip heavy cream with powdered sugar until stiff peaks form.
- Unmold cheesecake, top with banana slices, whipped cream, and garnish with whole wafers. Serve and enjoy!
