Step-by-Step Instructions
  1. Prep your vegetables by peeling and slicing the white onion, red pepper, green pepper, and carrots into bite-sized pieces.
  2. Set the Instant Pot to the sauté function and heat the olive oil. Add the sliced onion and sauté for 3-4 minutes until translucent.
  3. Pour in the white wine to deglaze the pot, scraping any flavorful bits from the bottom and allowing it to simmer for 1-2 minutes.
  4. Add the brown rice and water/vegetable stock to the pot, stirring well to ensure the rice is submerged in the liquid.
  5. Rub the turkey drumstick with olive oil, mixed herbs, salt, and pepper, then place it on the trivet above the rice mixture.
  6. Seal the Instant Pot lid and cook on high pressure for 16 minutes, allowing a natural release for 5 minutes before quick release.
  7. Remove the turkey leg, fluff the rice gently with a fork, and serve the turkey leg on top of the rice.
