  • 1 cup 2% Milk
  • 1 cup Shredded Cheddar Cheese sharp or mild
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Ground Pepper
  • 2 pieces Boneless Skinless Chicken Breast pound evenly
  • 1/2 cup Shredded Parmesan Cheese for topping

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Chop broccoli, dice the onion, and measure out the carrots and frozen peas.
  3. Season chicken with salt, pepper, and garlic powder, then sear in a skillet for about 2 minutes on each side.
  4. In a large bowl, combine rice, broccoli, onion, carrots, and peas. Add chicken broth and milk, then season.
  5. Fold in chopped chicken and half of the shredded cheddar cheese into the rice mixture.
  6. Transfer mixture to the prepared baking dish and top with remaining cheddar cheese.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove foil and continue baking for an additional 8-10 minutes until cheese is browned.
  9. Let the casserole rest for 5 minutes before serving, fluffing gently with a fork.
