- Preheat your oven to 350°F (175°C). In a skillet, melt 3 tablespoons of unsalted butter.
- Add sliced overripe bananas and sprinkle about 1/2 cup of brown sugar. Sauté for about 5 minutes until caramelized.
- Pour in 1/4 cup of rum and simmer for another minute.
- In a bowl, mix 1 cup of flour, 2 teaspoons of baking powder, and a pinch of salt. Add 1/4 cup cubed unsalted butter and mix until crumbly.
- Pour in 1/2 cup of milk and stir until just combined.
- Spread the banana mixture in a greased 8x8-inch dish and dollop the cobbler topping over it.
- Bake for 30 to 35 minutes until the topping is golden brown.
- Allow to cool for 10 minutes and serve warm, optionally with vanilla ice cream.
