  • 3 tablespoons Soy Sauce/Tamari Tamari is perfect for a gluten-free version.
  • 2 star Star Anise Omit if undesired or use a touch of ground turmeric for a different zest.
  • 8 ounces Rice Noodles Feel free to choose any noodle type you prefer.
Optional Toppings
  • 1 tablespoon Sesame Seeds Optional, but they elevate a simple bowl to something special.
  • 1 teaspoon Chilies/Red Pepper Flakes Adjust to your heat preference.

Method
 

Cooking Instructions
  1. Preheat a large soup pot over medium heat. Add grapeseed oil and heat it for a minute. Sauté chopped bok choy for 1-2 minutes until wilted, season with salt and pepper, then set aside.
  2. In the same pot, heat another teaspoon of oil and sauté shallots, mushrooms, and half of the green onions for about 5 minutes until soft.
  3. Add minced ginger and garlic, cooking for an additional minute until fragrant.
  4. Pour in vegetable broth and water, soy sauce, and star anise. Bring to a boil, then reduce to simmer for 10 minutes.
  5. Add rice noodles and cook according to package instructions, about 4-6 minutes.
  6. Stir the sautéed bok choy back into the pot and heat through for a minute. Discard star anise.
  7. Ladle the soup into bowls, garnish with remaining green onions and optional sesame seeds. Serve hot.
