- Preheat a large soup pot over medium heat. Add grapeseed oil and heat it for a minute. Sauté chopped bok choy for 1-2 minutes until wilted, season with salt and pepper, then set aside.
- In the same pot, heat another teaspoon of oil and sauté shallots, mushrooms, and half of the green onions for about 5 minutes until soft.
- Add minced ginger and garlic, cooking for an additional minute until fragrant.
- Pour in vegetable broth and water, soy sauce, and star anise. Bring to a boil, then reduce to simmer for 10 minutes.
- Add rice noodles and cook according to package instructions, about 4-6 minutes.
- Stir the sautéed bok choy back into the pot and heat through for a minute. Discard star anise.
- Ladle the soup into bowls, garnish with remaining green onions and optional sesame seeds. Serve hot.
