For the Salmon
  • 4 fillets Atlantic Salmon
For the Sauce
  • 2 tablespoons Olive Oil For cooking.
  • 1 tablespoon Butter Adds richness.
  • 1 cup Diced Yellow Onion Provides sweetness.
  • 3 cloves Minced Garlic Fresh is recommended.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Vegetable Broth Chicken broth can be used.
  • 1 cup Half-and-Half Can substitute with heavy cream or lighter milk.
  • 1 teaspoon Dried Basil Fresh basil can be used.
  • 1 teaspoon Dried Parsley Can be omitted.
  • 1 teaspoon Fine Sea Salt To taste.
  • 1 teaspoon Crushed Red Pepper Flakes Leave out for milder sauce.
  • 1 tablespoon Fresh Lemon Juice Brightens flavors.
  • 1/2 cup Grated Parmesan Cheese Nutritional yeast can be used.
  • 2 cups Fresh Spinach Can substitute with kale.

Method
 

Step-by-Step Instructions
  1. Pat the salmon fillets dry and season with salt and pepper. Heat olive oil in a frying pan and sear the salmon for 4-5 minutes on each side. Remove and set aside.
  2. In the same pan, melt butter and sauté the onion for 2-3 minutes until translucent.
  3. Add minced garlic and cook for an additional minute. Then, add cherry tomatoes and vegetable broth. Cook for 2-3 minutes until tomatoes start to wrinkle.
  4. Smash the tomatoes gently and simmer for another 2-3 minutes.
  5. Stir in half-and-half, dried basil, and dried parsley. Season with salt and red pepper flakes. Simmer for about 2 minutes.
  6. Add spinach and Parmesan cheese, stirring until spinach wilts and cheese melts.
  7. Return salmon to the pan and cook for 2-3 more minutes until warmed through.
  8. Cook fettuccine noodles according to package instructions. Drain and serve with the salmon mixture on top.
