Ingredients
  

For the Salad
  • 4 nectarines can substitute with peaches or plums
  • 8 oz burrata cheese can substitute with fresh mozzarella
  • 4 oz prosciutto can substitute with avocado for vegetarian option
  • 1 cup cherry tomatoes can use any seasonal tomato variety
  • 1 cup heirloom tomatoes regular tomatoes can be used
  • 1 cup fresh cherries optional, can be substituted with more tomatoes
  • 4 cups mixed baby spring greens can substitute with spinach or arugula
For the Vinaigrette
  • 2 tbsp lemon juice lime can be used as a substitute
  • 1 tbsp lemon zest
  • 2 tbsp white wine vinegar can substitute with apple cider vinegar
  • 4 tbsp extra virgin olive oil can use avocado oil as an alternative
  • 1 tsp salt adjust to taste
  • 1 tsp black pepper adjust to taste
For Garnish
  • 1 tbsp fresh herbs (oregano, mint, lemon thyme) use your favorite herbs

Method
 

Step-by-Step Instructions
  1. Preheat your grill or grill pan over medium-high heat for about 10 minutes.
  2. Wash and dry the nectarines, cut them in half, remove the pit, and slice each half into quarters. Lightly brush with olive oil.
  3. Place the oiled nectarines on the grill grates and grill for 2-3 minutes on each side until charred.
  4. In a bowl, whisk together lemon juice and zest, white wine vinegar, and chopped fresh herbs. Slowly drizzle in olive oil while whisking.
  5. In a serving bowl, combine mixed greens, cherry tomatoes, heirloom tomatoes, and cherries. Pour the vinaigrette over and toss gently.
  6. Place the grilled nectarines on top, tear burrata cheese over the salad, and add prosciutto. Garnish with herbs and black pepper.
  7. Serve immediately, optionally with grilled baguette slices.
