Preparation
- Preheat your grill to medium heat, around 350°F. While the grill is heating, brush the sweet corn with canola oil.
- Place the corn directly on the grates and grill for about 10-12 minutes, turning every few minutes until tender and slightly charred.
- While the corn is grilling, combine mayonnaise, garlic powder and pepper in a bowl to make the creamy sauce.
- Once the corn is grilled, let it cool and cut each ear into thirds for bite-size pieces.
- Insert corncob holders into each piece, then spread the mayo mixture over each corn piece.
- Sprinkle crumbled feta, seafood seasoning, and minced fresh cilantro over the tops.
- Serve warm and include lime wedges for garnish if desired.
