- Wash the radishes under cool running water. Slice them into even pieces about 1/8” thick and place in a mixing bowl.
- Squeeze the juice of half a lemon into the bowl with the sliced radishes, add a generous pinch of salt.
- Gently massage the radish slices for about 1-2 minutes until softened.
- Drizzle in the olive oil and sprinkle the Parmesan over the top, toss gently.
- Add fresh dill by tearing into smaller pieces and sprinkle into the bowl, toss again.
- Plate the salad evenly, adding extra lemon zest, Parmesan, and a crack of black pepper.
- Serve immediately for best flavor and texture.
