Step‑by‑Step Instructions for Ginger Onion Fried Sea Bass
  1. Begin by seasoning the sea bass fillet with salt and pepper on both sides. Allow it to marinate for 15 minutes at room temperature.
  2. In a large skillet, pour in enough cooking oil to cover the bottom and place it over medium-high heat until the oil shimmers, about 3-4 minutes.
  3. Carefully add the marinated sea bass fillet to the hot skillet and fry for about 3-4 minutes on one side until golden brown. Flip and cook for another 3-4 minutes until crispy.
  4. Using the same skillet, reduce heat slightly and add minced ginger and garlic. Sauté for about 30 seconds until fragrant.
  5. Next, toss chopped green onions into the skillet with the sautéed ginger and garlic. Cook for another 30 seconds until tender.
  6. Return the crispy sea bass back into the skillet, pour in soy sauce, oyster sauce, and a sprinkle of sugar, gently tossing for about a minute.
  7. Taste the dish and adjust with extra salt and pepper if needed, allowing the fish to marinate in the sauce for an additional minute over low heat.
