Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking sheet or muffin tin.
  2. Melt 2 tablespoons of butter and 1 tablespoon of olive oil in a saucepan over low heat. Add 2 cloves of minced garlic and stir for 2-3 minutes until fragrant.
  3. Slice potatoes into thin rounds (1-2 mm) using a mandolin slicer. Place them in cold water.
  4. Remove potatoes from water, pat dry, and layer 8-10 slices in each muffin tin cup. Baste with garlic butter and sprinkle with Parmesan, salt, and pepper.
  5. Bake for 25-30 minutes or until edges are golden brown and crispy.
  6. Cool in the muffin tin for 5 minutes before removing and garnish with parsley.
