  • 2 medium Zucchini or yellow squash
  • 1 pound Chicken Breasts thinly sliced
  • 2 tablespoons Olive Oil or avocado oil
  • 3 cloves Garlic minced
  • 1 medium Onion sliced
  • 1 medium Red Bell Pepper sliced
  • 1 teaspoon Crushed Red Pepper Flakes adjust to preference
For Flavoring
  • to taste Salt preferably sea salt
  • to taste Pepper
  • 2 tablespoons Soy Sauce or tamari
  • 1 tablespoon Oyster Sauce or substitute with mushroom sauce
For Garnish
  • 1/4 cup Fresh Parsley chopped
  • Grated Parmesan Cheese optional

Method
 

Preparation
  1. Spiralize the zucchini and set them aside in a bowl.
  2. In a large skillet, heat olive oil over medium-high heat and sauté garlic and onion until fragrant.
  3. Add chicken to skillet, season with salt, pepper, and red pepper flakes, and cook until golden brown.
  4. Toss in bell pepper and sauté until softened.
  5. Add zucchini noodles, soy sauce, and oyster sauce; cook until zucchini is tender yet crisp.
  6. Garnish with parsley and optional Parmesan before serving.
