- Prepare the coating by mixing plain flour, garlic powder, salt, and black pepper in a shallow dish. Coat each salmon fillet thoroughly and set aside.
- Heat a non-stick pan over medium-high heat and add olive oil. Fry the salmon fillets for about 3 minutes until golden.
- Flip the salmon and add unsalted butter. Fry for another 2 minutes while basting the salmon with the melting butter.
- Remove salmon from the pan. Lower the heat and sauté minced fresh garlic in the remaining butter for about 30-60 seconds.
- Pour in vegetable stock, scraping fond from the pan. Simmer for 1-2 minutes and whisk in remaining butter until melted.
- Return the salmon to the pan, baste with sauce, and serve immediately with parsley and lemon wedges.
