- In a medium mixing bowl, blend together Greek yogurt, peanut butter, honey, and vanilla extract until smooth. Fold in mini chocolate chips.
 - Line a baking sheet with parchment paper and drop spoonfuls of the mixture, flattening them into discs. Freeze for 1-2 hours until firm.
 - Combine dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in bursts until melted and glossy.
 - Dip each frozen bite in the melted chocolate until fully coated, then place them back on the parchment-lined baking sheet.
 - Sprinkle desired toppings over the soft chocolate coating. Return to the freezer for 15-20 minutes to set.
 - Transfer the bites to an airtight container and store in the freezer for up to three weeks.
