Step‑by‑Step Instructions
  1. In a medium mixing bowl, blend together Greek yogurt, peanut butter, honey, and vanilla extract until smooth. Fold in mini chocolate chips.
  2. Line a baking sheet with parchment paper and drop spoonfuls of the mixture, flattening them into discs. Freeze for 1-2 hours until firm.
  3. Combine dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in bursts until melted and glossy.
  4. Dip each frozen bite in the melted chocolate until fully coated, then place them back on the parchment-lined baking sheet.
