  • 1 bag Coleslaw Mix or freshly shredded cabbage
  • 1 cup Black Beans well-drained
  • 1 cup Corn can substitute with roasted corn
  • 1 medium Red Bell Pepper diced
  • 1 medium Jalapeño diced, can substitute with green bell pepper
  • 1 bunch Green Onions sliced
  • 1 handful Fresh Cilantro
  • 1 cup Chili Cheese Fritos or tortilla strips
For the Chipotle Dressing
  • 1 cup Sour Cream can use Greek yogurt
  • 1/2 cup Mayonnaise can use vegan mayo
  • 2 tablespoons Lime Juice or lemon juice
  • 2 tablespoons Chipotle Sauce

Method
 

Step-by-Step Instructions
  1. Combine the Salad Ingredients in a large mixing bowl.
  2. Prepare the Chipotle Dressing in a separate medium bowl.
  3. Combine Salad and Dressing gently.
  4. Add Fritos just before serving.
  5. Adjust seasoning and serve immediately.
