- In a large mixing bowl, add the sliced cucumbers, halved cherry tomatoes, and thinly sliced red onion. Gently stir to combine.
- In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar or honey, salt, black pepper, and oregano until smooth.
- Drizzle the dressing over the vegetable mixture and gently toss to coat all the ingredients evenly.
- Cover the bowl or transfer to an airtight container and refrigerate for at least 30 minutes to enhance flavors.
- Before serving, sprinkle the chopped parsley or dill over the salad and toss gently again.
