  • 2 cups sliced cucumbers evenly sliced
  • 1.5 cups halved cherry tomatoes or grape tomatoes
  • 1 small red onion thinly sliced
For the Dressing
  • 1/4 cup apple cider vinegar or lemon juice
  • 2 tablespoons olive oil or neutral oil
  • 1 tablespoon sugar or honey to keep it vegan, use granulated sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon oregano or Italian seasoning
For Garnishing
  • 2 tablespoons chopped fresh parsley or dill or cilantro as alternative

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add the sliced cucumbers, halved cherry tomatoes, and thinly sliced red onion. Gently stir to combine.
  2. In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar or honey, salt, black pepper, and oregano until smooth.
  3. Drizzle the dressing over the vegetable mixture and gently toss to coat all the ingredients evenly.
  4. Cover the bowl or transfer to an airtight container and refrigerate for at least 30 minutes to enhance flavors.
  5. Before serving, sprinkle the chopped parsley or dill over the salad and toss gently again.
